Transporte</h3><h3></h3>Depois de colhido, o açaí é transportado para a fábrica onde vai ser higienizado e despolpado.&nbsp;A colheita e transporte do açaí acontece logo pela manhã, pois como a temperatura é mais baixa, o processo de degradação do fruto é menor, mantendo-se as suas características e propriedades.Este transporte é feito, sobretudo, de barco, o que facilita um maior escoamento dos frutos produzidos em áreas de várzea (floresta típica na Amazónia, ao longo do rio). Quando a produção tem origem em terra firme, o transporte é feito por via rodoviária. <h3>3. Lavagem</h3>Quando chegam às unidades de processamento, os frutos são selecionados de forma manual e cuidadosa e seguem para um processo de lavagem que garante a higienização para o passo seguinte: o despolpamento.<h3>4. Despolpamento</h3>Este processo consiste na remoção da polpa do açaí, com recurso a máquinas chamadas despolpadeiras ou batedeiras.A polpa extraída pode ser de 3 tipos:<ul><li>A (muito densa, ou grossa);</li><li>B (média ou regular);</li><li>C (pouco densa, ou fina).</li></ul>O açaí que se obtém deste processo pode ser embalado e congelado de imediato, ou ser submetido a um tratamento térmico, chamado pasteurização. Depois de embalada, a polpa segue para uma zona de congelamento rápido, a -40ºC.
